As gudi padwa is the first day and first festival of the year, as per Hindu calendar puranpoli is mainly prepared in India but mostly it is popular in Maharashtra as well as Gujrat. In Gujrat, it is prepared with tur dal where as in Maharashtra it is prepared with chana dal.
In konkan region, they even add coconut in stuffing of puranpoli. I am using chana dal, jaggery, cardamom and nutmeg powder to increase the flavor of dish. Every house in Maharashtra prepares puranpoli on this eve but due to any circumstances if puranpoli is not possible to prepare than they atleast prepared some puran for Naivedya.
Puranpoli
Ingredients for puran:
1 cup chana dal
1 cup greeted jaggery
1/4 t-sp salt
1/4 tsp turmeric powder
1 tsp nutmeg and cardamom powder
Method:
Wash channa dal than add oil, salt and turmeric powder. Add 2-3 cup of water in dal put the vessel in a cooker and cook it for 3-4 whistles. Once your cooker is little cooled down take the dal from cooker. Drain the cooked dal and reserve the water to prepare katachi amti.
Once dal is drained add dal in vessel put it on a low medium flame add jaggery to it and simmer in between so that it won’t stick to vessel or else it may burn. Add nutmeg and cardamom powder. Once puran gets thicken remove it from gas and churn it in puran machine.
Making dough for puranpoli:
Ingredients:
1 1/2 cup wheat flour
1/2 cup maida( all purpose flour)
1/2 tsp salt
2-3 tsp oil
Mix both flour, salt and oil in a bowl add little water and make a soft dough. The dough should be very soft. Cover the dough and keep aside for 30 mins.
To prepare puranpoli:
Take a lemon size ball of dough for that, take puran doubled the size of dough. Shape it as a small bowl and stuff the puran filling and shape it like a ball. Close the sides properly and carefully or else stuffing will come out. Flatten the ball and dust it in rice flour. Now, roll the puranpoli. Heat a griddle and transfer the puranpoli on griddle. Cook it from both the sides by applying oil to it.
Hot Puranpoli is ready to serve with dollop of ghee.
